The wines of Dog Point are a natural expression of the land whence they originate. Fruit is sourced off choice blocks dating back to the late 1970s. These older well established sites are a neighbour of the first commercial vineyard in Marlborough, established by Montana in 1973. The inspiration for Vat Series came from times when Deen De Bortoli would personally make up the blends, then chalk numbers on vats to identify them. Parcels of fruit grown to choice vineyards are earmarked for their bright varietal profile, harvested and assembled in the De Bortoli wineworks at Bilbul, to be crafted by the intrepid team into a fresh and crisp young wine, that's highly articulate of all things in fine Sauvignon Blanc.

Established 1967, Deakin Estate sold their harvests until a winery was built in 1980. Many of the vines have now achieved considerable age, but the team's efforts remain focused on producing fruit of the highest quality and wines brimming with flavour. The third release of this pure, single vineyard Sauvignon Blanc. Dancing Water is driven by the vision of Ross Trowsdale and Clare Bisso. Trowsdale studied viticulture and oenology, after which he travelled and worked vintages in the new and old world for a number of great producers, Pegasus Bay and Felton Road, Wyndham Estate and Cristom Vineyards, Weingut Stefanshof and Alois Kracher. These experiences have nurtured a love and respect for fine wine and the making of it.

Nestled within a cocoon of mixed vegetation and rolling hills, Dalrymple enjoys a unique and seductive aspect shared by only a few boutique vineyards littering Tasmania's Pipers River region. Discovered by Dr Bertel Sundstrup in 1987 after a long search for the perfect site, this small mature vineyard is now owned by the Hill Smith family and produces some of Australia's most distinctive cool climate, regional wines. Dalrymple is a textural Sauvignon Blanc, refined and exquisitely balanced, aromatic yet pleasingly dry, generous with ripe cumquat flavours.

Cullen are driven by a passion for purity of fruit and perfect balance in the finished wine. Grapes are picked by hand off vines grown to a strict environmentally friendly philosophy. All wines produced at Cullen are certified as biodynamic, carbon neutral and naturally powered. Cullen vary the ratio of Sauvignon Blanc to Semillon with each vintage according to how the varietals perform. Grapes are individually sorted and fermented to indigenous yeasts, with no acid additions and limited fining, permitting the expression of terroir to have a stronger voice in the glass.

Cullen will vary the proportion of Sauvignon Blanc to Semillon according to performance. Picked at healthy levels of baume, crushed and inoculated to mostly indigenous yeasts, a minor component is vinified and matured in French oak, while the freshness and vitality of Margaret River fruit is retained through a course of vinfication in controlled fermenters. Pungent, piercing and linear bouquet, the delicious flavours lead in to a long and particularly fine acid finish. Already drinking very well, will continue to evolve, a good choice today alongside gourmandise style crustacea and the freshest fish.

Pure Sauvignon Blanc, luxuriously barrel fermented through the spontaneous action of wild indigenous yeasts. A curious selection of tubular cigar shaped casks are essential to the style, longer and slimmer than traditional barriques to maximize sedimentery lees contact and enhance exposure to oak. Twelve months of age on light solids builds creamy richness and introduces Burgundian influenced, grapefruit boulangère complexity. A voluptuously proportioned, yet elegant, textural wine, a bliss alongside lemon and rosemary partridge or quail.

Exactingly fashioned from parcels of Semillon grapes, hand picked off dry grown vines, an exquisitely fragrant wine with a serious weight of palate, deliciously reflecting the cooler, balmy maritime breezes which rejuvenate the vineyard. The quality of fruit at Crawford River is the product of a painstaking approach to viticulture and careful management of crop levels throughout the growing season. From the lower terrace of Te Muna Road Vineyard in Martinborough, grapes are picked off several parcels of vine grown to stony, limestone influenced soils adjacent Huangarua River. Intervention in the cellar is minimal out of respect for the true character of a special vineyard, whilst exposing the textural elements for a more evocative style of Sauvignon Blanc, achieving a wine with distinctive fine, soft, chalky texture and great elegance.

Scotchmans Hill enjoy a long established repute for the most satisfying Victorian Sauvignon Blanc, their expertise with the varietal has delivered an unbroken run of salubrious editions which have become a staple of the Australian wine list. Sauvignon Blanc was a natural choice for the Bellarine Peninsula, the team have since developed an intimate knowledge of the soils and microclimates most suitable for producing the very best. Cornelius is the estate flagship, the defining style in maritime influenced, cool climate Victorian Sauvignon Blanc.

Situated amongst the scenic, cool ripening climes of Yarra Valley, the steep aspects and closely planted Coldstream Hills vines yield harvests of the finest Sauvignon Blanc. The wines here are quite literally hand made, not withstanding the skill of the winemakers, there has been no significant change in the art of vinification. The aim is to produce a definitive Yarra Valley Sauvignon Blanc, characterised by elegance and finesse, by silky supple texture, length of flavour and the ability to offer sophistication and complexity, within a forward drinking fruit driven style.

The Cloudy Bay winemaking team suggested doing the unthinkable in vintage 1991. Why not ferment some juice with indegenous yeast, completely wild microflora, untrained and uncultured? This was uncharted territory in New Zealand and only nature could decide the outcome. A few barrels were set aside for trial, the juices quickly fermented into a pungent brew. Unperturbed, the winemakers let nature take it's course until spring, when the ugly duckling had morphed into a savoury complex wine of great intensity and voluptuous mouthfeel.

There are good reasons why the vista of Cloudy Bay dresses Marlborough's most internationally feted Sauvignon Blanc. Originally named and charted by Captain Cook in 1770, Cloudy Bay lies at the very northeast of New Zealand's South Island, where the auspicious vines of Wairau Valley can catch a glimpse of the sea. A single vineyard effort by one of Marlborough's most devout winemakers, Clayfork offers a splendid array of ripe tropical fruit characters with a remarkable capacity to rejuvenate and refresh. This generous Sauvignon Blanc, fruit driven and vital, mates beautifully with all good cuisine and is the coup de grâce alongside shellfish mornay.

The handsome manors of Clarence House were built at the very epicentre of Hobart's colonial market gardens, upon the fertile foothills of Meehan Ranges. The unspoiled viticultures here ripen a magnificent harvest of Sauvignon Blanc, more flavourful than her northern siblings on the mainland, bristling with aromatic fruits and layered with luscious textures. Sauvignon Blanc was amongst the first plantings here, the vines are now well into maturity. Clarence House makes a style that's plush with lemon lychee characters, underpinned by the food friendly savouryness of green vegetable, thistle and pea.

Clairault are one of the pioneering vineyard wineries of Margaret River. Their aim has always been to create balanced, well structured wines which reflect a unique terroir and the outstanding quality of fruit from a mature site. Semillon in particular is a stand out performer, vinified alongside parcels of intensely aromatic Sauvignon Blanc, into a crisp, clean wine of exciting mineral fruit character, the classic dry Margaret River white, offering immense drink now appeal.

Domaine Christian Salmon endeavour to preserve the regional characters of Sauvignon Blanc from the rolling landscapes of Sancerre, the freshest fruit is treated to the most pristine ferments, completely unwooded and unoaked. Initial impressions of intense flint minerality, verging on gunpowder. Being so aromatic, the wine opens up with air, exuding nuances of the orchard, particularly ripe pear. Chestnut Grove has developed a fine reputation for producing one of Australia's best examples of cool climate Verdelho. The growing conditions and excellent soil types of the Chestnut Grove vineyards, produce intensely flavoured, fresh topical characters, and juicy forward drinking wines. Complexity is purely fruit derived in this dashing Verdelho Cuvee, enhanced by a smaller proportion of Sauvignon Blanc, it shows good intensity of ripe tropical fruit, guava, gooseberry, passionfruit and spice. A tiny appellation named Ste. Croix-du-Mont, directly across the Garonne River from Sauternes has come to prominence as a viable alternative to it's famous neighbour, with which it shares a similar mesoclime and growing conditions. Chateau des Tours is the second label by Chateau Loubens, who are famous for their toothsome and succulent, finely textured dessert wines. Quite simply, a spectacular treat, be the first to discover Chateau des Tours before the secret's out. Beautifully fruited in its youth, Château Des Tours is elegant, concentrated and rich.

Château Des Tours is the second wine of the famous Château Loubens, flagship of the Sainte-Croix-Du-Mont appellation, which is carefully run by M. Arnaud de Seze, one of the best properties of the Sainte Croix du Mont appellation. Sainte-Croix-du-Mont is an important sweet white wine appellation on the right bank of the Garonne whose wines, at their best, bear a striking resemblance to those made across the river in Sauternes. Beautifully fruited in its youth, Château Des Tours is very elegant. Concentrated and rich, it can age many years.
